Sea purslane is a salt-tolerant "sea vegetable" being grown in an experimental, eco-friendly system by Mote Senior Scientist Dr. Kevin Main, whose farm-to-table research emphasizes raising sea veggies together with seafood (redfish), using marine aquaponics to turn fish waste into plant fertilizer. Main has developed the "Sea Purslane Cookbook" to help local eaters enjoy this beach-dwelling vegetable and encourage forward-thinking farmers to cultivate it.

Throughout the month of March, Mote Aquarium experiences high daily visitation volume with many timed ticketed entry slots selling out. Guests are highly encouraged to purchase tickets in advance in order to guarantee entry.
