During her time at the University of Florida, Eve studied abroad in Sorrento, Italy. There, she worked in the Marine Protected Area of Punta Campanella to protect the oldest seagrass species in the Mediterranean Sea, Posidonia oceanica. This formative experience first led to her decision to move to Madrid, Spain after graduation to teach English for the year, then to apply for an internship with Mote's Marine Policy Institute.
While interning for the Marine Policy Institute, Eve did preliminary research on seagrass conservation policy in the US, particularly in Florida. As her internship came to a close, she accepted a job in the Sponsored Programs Office, where she provides research support for the scientists at the Mote Aquaculture Research Park.
